Grilled Fish Packets

  • 4 filets of fish (ie. tilapia, grouper)
  • 4 tsp of olive oil
  • Salt and pepper to taste
  • 4 sprigs of fresh herbs (rosemary, parsley, dill)
  • 1 lemon, thinly sliced
  • 1 medium onion, thinly sliced
  • 4 pieces of heavy duty aluminum foil, about 18 inches long

Step 1. Set each filet on a separate piece of foil.

Step 2. Add salt, pepper, and herbs to taste. Drizzle each filet with olive oil.

Step 3. Add lemon and onion slices to each packet.

Step 4. Seal packets by folding the edges, so no steam can escape while grilling.

Step 5. Heat half of your grill to high with the cover closed.

Step 6.  Place packets on other side of the grill (indirect heat) for 10-15 minutes, or until fish is opaque and thoroughly cooked.

Step 7. Remove from grill, and serve immediately.
