Ingredients: Salmon Burger
Salmon filet (skin removed), 1/4 cup chopped cilantro, 1 egg, 1/4 cup mayonnaise, 1 tbsp lemon juice, 1 tsp mustard, salt, pepper, olive oil for greasing the pan or grill, and 1 cup fresh breadcrumbs (while some might opt for Pako, fresh bread crumbs make a huge difference! Use Italian or plain white bread for this recipe)

1 large avocado (chopped), 1/3 cup chopped red onion, 1/4 cup chopped fresh cilantro, 1 lime juiced, 1 medium sized tomato chopped, 1 tbsp extra virgin olive oil, and salt and pepper
Steps: Salmon Burger
Chop the salmon filet into small pieces (about 1/4 inch) and transfer it into a medium mixing bowl. Gently stir in the rest of the ingredients. Let the mixture rest for 5-10 minutes. Heat a little oil in a large non-stick grill pan over medium heat. Divide the salmon mixture into 6 neat patties (we used a 1/2 cup as a measure). Fry/grill the patties until browned on both sides and l cooked through; about 4 minutes on each side.
Steps: Avocado Salsa
Combine all the salsa ingredients together and mix well. If you would like to add a kick to the salsa, add two dashes of your favorite hot sauce!
Ingredients: 1 cup Sugar, 1 cup Water, 2-3 sliced fresh Peaches, 3 Tea Bags, 6 cups Water
Steps: Bring ingredients to boil. Then reduce heat to medium. Crush peach slices as you stir to dissolve sugar. Turn off heat cover and let sit for 30 minutes. Boil water and brew tea letting steep 5 minutes. Remove tea bags and refrigerate. Strain syrup through a fine strainer to remove fruit pieces. Add syrup to tea and serve over ice.
